December Talking Meme: Desserts & Small Talk

mariole asked me a couple questions. One of these has a very, very short answer.

How do you handle small talk?

mariole also asked me about desserts, which I can talk about for much longer. I am actually not much of a dessert person. I love a few squares of dark chocolate, preferably at a stressful time of day, but my preferred indulgence is cheese. That said, I do have a couple favorites. In the summer, my go-to dessert is Smitten Kitchen's Yogurt Panna Cotta with Walnuts and Honey. I love serving them in individual ramekins or little jam jars; it always seems so special when you can present each guest with their own little dish. They are light and airy, perfect for a hot day, and they're practically impossible to fuck up -- unless, of course, you forget to put in the gelatin, which I have done. In that case, they are basically a yogurt drink, which still tastes good, but not really for serving at a dinner party.

My favorite winter dessert, which I always make at the holidays, is brown butter blondies. The original recipe, which you'll see when you click on the link, has this ridiculous caramel topping that I don't recommend -- it's way too sweet, and it hardens up in the fridge enough to break your teeth. The blondies, however, are a thing of beauty. The brown butter makes them just the teeniest bit savory, which I find very satisfying. Like the panna cottas, they are pretty easy to whip up, although brown butter can be a little fickle if you haven't done it before. I find the trick is to make it in an enameled pan that's white inside. That way it's easy to monitor the color of the butter. It goes from perfectly browned to burnt in seconds, so you have to be ready to snatch it off the stove at just the right time. Anyway, they are one of those things that I love to eat, but I never keep around the house. The amount of butter is pretty decadent, even for my admittedly permissive tastes. No matter - the pan always disappears fast when I take it to someone's house.
